Care of the game meat

My first act is setting up the game in such a way that I can effeciently field dress it, then proceed to field dress and prop open the chest cavity to allow the maximum cooling. I will wipe down the chest cavity with some paper napkins I have for such a purpose then apply a pepper powder in the cavity. Depending on where and what time of day and the temp of the season I will skin and quarter the game and wrap it up in cheese cloth and start the process of transporting it to camp or if close will fetch an ATV or such vehicle to bring the game to camp and meat pole to skin/quarter there. We hang the game for a number of days depending on weather, then butcher and wrap it for the freezer.

I may have forgoten a step?? have I?
